If the weather here in UK hasn’t given you serious summer vibes lately, I’m about to inject a bit of summer sunshine into your life with my very own tantalising mojito cocktail recipe! I don’t know what it is about summer or hot weather in general but it really gets me in the mood for a bit of a boozy cocktail and I’m not one that drinks alcohol very often! In fact alcohol is my least favourite beverage, for me its usually that stuff you whack out at special occasions and romantic meals, but cocktails have admittedly got me really excited for summer this year, and believe me, its fast approaching!
So whether you’re barbecuing with family or friends, having a bonfire, garden party or simply just relaxing with a cocktail in hand then this one is for you, my fellow mojito lovers!
2 Limes (1 Sliced, 1 Juiced)
1 Level Dessert Spoon of Sugar
Handful of Fresh mint leaves
500ml Tonic Water
Cut one whole lime into thin slices and throw into your jug. Juice a second lime and also add to the jug.
Next add the sugar and a handful of unchopped mint leaves to the jug and gently muddle. (You can muddle all the ingredients together by using the end of a baking roller.)
Once muddled you need to add your rum! The choice of rum is yours but I tend to go for appletons.
Finally finish by pouring your tonic water and lemonade into the mix and give it a good stir.
Leave your mojito to infuse in the fridge for a couple of hours, add some ice cubes and you’re ready for that refreshing summer cocktail fun!
